It's referencing the shape of the rubber ring used to hold the lube inside the rollers, and keep dirt/dust out.
O-rings have a round or O shaped cross section.
The X rings have an X shaped cross section.
The X shape works to have 2 contact points instead of 1 with the O-ring, and the first contact point is said to work a bit like a "wiper" to push dirt out and further protect the inside contact point.
Spec wise, the X ring versions tend to be rated stronger, longer lasting... over the O-ring versions.
Personally my experience so far is that it's worth the difference in cost to use the X-ring.
