I just purchased a 1997 Katana 600, and I really like it so far. I have already read so much useful information here, and I've only been browsing for an hour! I need to buy safety gear because I've been borrowing a friends stuff up until now. Can anyone advise as to where I can get a nice set of gloves, a good helmet, and a jacket?

Gear is hard to advise on because a lot of stuff you really need to try on for fit before purchasing, particulalry helmets, jackets and footwear. So for me personally, mail order is out. Besides, there are so many bike shops in Toronto that I can always find what I need somewhere, in stock. Ask locals where they get their stuff.

Go to a local shop and try on a bunch of gear, take mental notes on what you like and what fits. If they have good deals or deals close to what on the web, buy it. Don't hassle with online if you have a local shop that you can work with.
If they are just too darn expensive, go to:
J&P Cycles, the industry's largest motorcycle superstore, offers over 700 brands of motorcycle parts, helmets, gear and apparel.
MotorcycleGear.com: Your source for the latest motorcycle gear and the hottest motorcycle closeouts!
They will have plenty of closeout items you can look through.
Also, WELCOME to KR.
