Yoshi headers will only pick up more power if you rejet your carbs accordingly to balance the equation of intake vs exhaust.
Have no idea how much more power. You would have to dyno the bike before and after for good hard numbers.
Try doing a search for dyno sheets and see what you find.

Flow design of the primary pipes exiting the motor. Larger tubes used for the primary pipes.
Now, if you're talking the full system, then you are talking about slightly larger and free flowing mid pipe, and exhaust can.
About the same as putting duals with a flowmaster on your truck or car. Just for a bike, a 4 into 1 gives better performance than duals.

Actually, the headers are not what changes the sound... the muffler (can) is what makes that sound.
