I just receintly started riding canyons in Southern California with a group of sport bike guys and I was told to stay in second gear for most of the twisties but the RPMs were way to low and 1st gear was at redline...any suggestions to the proper ratio of sprocket teeth in the front and rear? Also I am assuming that I need a chain replacement...I ride a 2000 Katana 750 with 13k miles...thanks for any suggestions

Welcome LW... First you have to take into consideration the bike they are riding vs. your kat, also weight, torque and HP make a difference between SS bikes and our S/T kats.
If you gear to a perticular type of riding you may end up suffering other places.. like freeway speeds or off the line acceleration. There are plenty of gearing options, I suggest you decide how your bike runs with your riding style, not someone elses. Riding around in 2nd gear all day isnt good for the trans either.
Yes, replace the C/S, rear sprockets and the chain all at the same time. Check the KR store for sprockets, there is a 15/47 set up and you can also get custom tooth/pattern units as well.http://www.7thgeardesigns.com
