my 750 speedo didn't work when I bought it. the problem was the sensor rotor was left off of the front sprocket. it goes on after the sprocket is tightened and is held on by an 8 mm bolt. if that's missing it doesn't work.

That is what I'm thinking happened because previous owner said he replaced the clutch but didnt know how to adjust it so I'm thinking he left it out or didn't put bolt in or something. Can I pop the clutch cover off without stuff going everywhere or what's going to happen?

Sprocket cover is where the sensor is, and where the rotor will be. Nothing to fall off/out when you take it off. Highly recommended to clean up and service the clutch actuator while you have the cover off though (it's the part the cable attaches too on the cover, and needs to be disassembled, cleaned, and new water repellent grease packed in).
