I have purchased a 1999 Katana 600 and am interested in purchasing after market pipes. I've been told that I would have to rejet the carb because of the difference of back pressure. I want to know if this is true and which sounds best. Does anyone have a sound file or either that I could listen to?

Are you looking to put on a full system or just a slip-on? With most full systems, you will have to install a jet kit - for just a slip-on, you shouldn't need to.
You will find that most people on here like the Ivans Jet kit....
As far as sound goes, I like the Yosh - not quite as loud as the V&H...Comment
