Wanted to give a little update to this. The stutter/bog is gone from 5-7k, completely. I dropped the needle down to the 4th notch on the FP jet needle. Resync'd the carbs, because the first time I wasn't sure if I got it right. I messed with it a little longer this time, until I could hear the bike was running the way it was supposed to, looked over at the manometer and all columns were even.

So with that said I have a bog/stutter from 2-3 rpms in 2nd gear. I'm going to raise the float height up 1mm to 15mm and hopefully that solves the issue, then of course resync afterwards.

Idle is perfect on this bike, I'm mean it's great. I'm thinking that soon the "Is it going to leave me stranded" feeling will go away.
