The motor will fit into any katana frame you can find.
If you want to keep it in an 1100, avoid the '88, different frame with worse geometery so it has worse handling. 89-94

Yep, 600 will work. If the frame is coming with a swing arm, and it is 89-97, the 750 swing arm is 1.5" longer than the 600. Post 750 and 600 have the same length swing arm.
If you're going to race it and/or do engine work for more power, you might want to brace the frame/swingarm, but plenty of folks have dropped 1100 or B12 motors in.
I'm reasonable sure that the 600 and 750 frame are similar enough (other than the noted swingarm length) that handling will be the same either way. Not positive though, so anyone else reading this feel free to chime in1998 Katana 750

At a higher performance level with upgraded suspension, there is noticeable difference in the handling between the differences of the 1.5" length. The average rider on a stock suspension would have no clue.

I'm running a fully built bandit 1200 engine in my 1995 gsx750f
Kat 750 frames are cheap as hell on ebay, get one with a clean title and do a 17" wheel conversion from a gsxr or post Katana.
While you're at it replace the beat up rear shock with a Yamaha R6 one from 2010, you'll need to buy a set of bushings from Amazon for $6 but they are so much better. Compression, rebound and pre load adjustments.
I've got a lot of help from this community, you'll find one of the most helpful members on the webs here.
