Only retorquing certain bolts (brake caliper mounting bolts, exhaust header bolts), and possibly some time-related replacements (fuel lines, vacuum lines). You've pretty much covered everything else!

Depends on how long it's been since it was last done. Prudence would be to measure the clearances, even if you didn't change anything... then you'd know if you actually need to do any adjustments.

What? Are you sure you mean on a Katana? The labor for the whole 7.5k/15k mile service for a Katana, which includes a valve adjustments, is 2.7 to 3.2 hours.
